Slow Cooker Devilled Sausages

Description

My 4-year-old babe is a sausage LOVER! He'll turn his nose up at pulled pork or a drumstick, but a sausage? Never! So in my quest to make things easier for myself I tried a few slow cooker sausage dishes. I did curried sausages and they were a flop and then I remembered the devilled sausages dish my mumma would make when I was younger. So I had a few go's at that and came up with this gem. It is SO rich and tasty, I reckon it would be just as yummy with gravy steak and baked in to a pie too.
Oh and if you're wondering which sausages to buy? I have tried a bunch and the only 'crap-free sausages' I've found that aren't dry or have grissly hard bits are The Free Range Butcher ones in Sydney. Their preservative & additive free variety is the one I buy. You can buy them from a stack of markets around Sydney or have them delivered fresh to your door. They're SO GOOD!


Ingredients

  • 3 medium onions, finely sliced
  • 2 garlic cloves, crushed
  • 1kg thick beef sausages
  • 1 cup of broth
  • 100g tomato paste
  • 100g roasted red peppers
  • 2 carrots, finely diced
  • 1 large apple, peeled and diced
  • 2 heaped tbsp worcestershire sauce
  • 1 heaped tbsp seeded mustard
  • 2 tspn tamari
  • 1 tspn smoked paprika
  • 1 tspn dried thyme
  • TO SERVE
  • 1 handful green beans
  • 1 broccoli, chopped in to florets

Instructions

  1. Fry off your onions and garlic in a pan until they've developed some great colour. Meanwhile, get chopping the carrots and apple and pop that in the slow cooker with all the sauce ingredients.
  2. Stir the onion mixture through the sauce items in the slow cooker and then pop the sausages on top. Give them a gentle stir and pop the lid on to cook on low for 6-8 hours.
  3. When the sausages are cooked, cut them in to 1/4's and then add the green beans and broccoli to the slow cooker. Pop the chopped sausages back in, give it a stir and enjoy with any side you like.
  4. I like to serve mine with cauliflower mash and my kids who aren't mash fans (I know, crazy right?) eat it as is, or with steamed frozen peas.

Notes

  • I keep my sausages whole as I am often trying to have my slow cooker cook for as along as it can so I can get to work. But if you want to speed things up, chop the sausages into 1/4's and they'll only take 2-hours on high to cook through.
