Description
My lemon and lime bunny tail recipe is cute, yummy and healthy. They're a fun take on the traditional bliss balls the kids can make with you and gift for easter presents/
Ingredients
- 1 cup oats or quinoa flakes
- ½ cup coconut butter
- ¼ cup maple syrup
- 1 tbsp vanilla extract
- 2 small limes, zested
- 1 large lemon, zested
- 1 cup shredded coconut, for rolling
Instructions
- Place oats or quinoa flakes in a food processor and pulse until they reach the consistency of a fine meal.
- Add remaining ingredients (excluding shredded coconut) and pulse again until mixture comes together as a dough.
- Scatter shredded coconut on a large plate. Scoop spoonfuls of mixture and roll into small balls (bunny tails), rolling each in shredded coconut until well coated. Pop onto a tray lined with baking paper and refrigerate until firm.
- Enjoy!
Notes
- Oats are packed with soluble fibre which helps to fill you up and keep you feeling fuller for longer. According to studies, the beta-glucan found in oats can help to satiate your appetite for up to 4 hours. It is also found to lower 'bad' cholesterol levels - a perfect excuse to whip up another batch of these, I say.
