Description
These healthy chocolate crackles will be loved by kids not just at Easter but anytime.
Ingredients
- 4 cups puffed brown rice
- 4 tbsp raw cacao
- ¼ cup desiccated coconut
- 1 cup coconut oil, melted
- 1 tsp vanilla bean powder or paste
- ½ cup rice malt syrup
- ¼ cup goji berries
- 30g white chocolate, for decorating
Instructions
- In a large bowl, combine puffed brown rice with cacao, desiccated coconut and goji berries.
- Heat coconut oil, vanilla bean paste (or powder) and rice malt syrup over a low heat and stir until melted and well combined. Allow to cool slightly before pouring over dry ingredients. Mix well.
- Using your hands, mould the mixture into owl shapes. You could also use a purchased mould. Place on a tray and refrigerate for an hour. Once set, melt white chocolate and place into a piping bag. Pipe the eyes, beaks and wings and place back into the fridge for a few minutes to set.
- If they aren't devoured in minutes, these owls make beautiful gifts. Pop them in clear cellophane bags and tie with some gorgeous twine or ribbon. Just be sure they have a quick trip to their recipient - they aren't quite as pretty when they're melted.
Notes
- I used the 'I Quit Sugar' chocolate crackle recipe as a base for these owls and added a few extra ingredients to boost the protein power. Goji berries are packed with amino acids and Vitamin C and have the highest concentration of protein of any fruit. They add sweetness to the chocolate would otherwise come from refined sugar - something you won't find here.
