Grab some Medjool dates, I have found the cheapest spot to get them from is The Source Bulkfoods.
Smoosh the nut butter in and top them with dark chocolate or nuts. See my notes at the bottom of the recipe of how you can REALLY fancy them up.
My kids LOVE this for dessert with some fresh fruit. I love mine directly from the freezer with a nice hot peppermint tea. That's livin! HA!

PrintHealthy Peanut Butter & Date Bites
- Total Time: 2 minutes
Description
This has to be the easiest snack/dessert for the babes.
Healthy peanut butter & date bites, and let me tell you, when you whack these babies in the freezer and eat them directly; they get EVEN BETTER!
Make a double or triple batch; you've been warned - ha!
Ingredients
6 Medjool dates
3 - 4 tbsp peanut butter (or any nut/seed butter)
Dark chocolate/nuts for the top
Instructions
Step 1. Slice your date enough to be able to pull the seed out, but not enough that the whole thing breaks in half.
Step 2. Pull the seed out and stuff the inside with your nut butter. Don't skimp here; the more, the better in my books.
Step 3. Top with dark chocolate, nuts, and seeds, or leave it bare—your call.
Step 4. If you want these to be REALLY amazing, pop them in the freezer. They go so chewy and caramelly.
Notes
I store these in the fridge or freezer and often make up a batch of 20 or so at a time. They're SO GOOD!
If you want to fancy it up, you can melt chocolate and dip the made-up dates in that too. Maybe even roll them in chopped-up nuts, now, wouldn't that be pretty and YUM! x
